Ingredients

Potatoes

  • 3 lbs Baby Potatoes

Herbs

  • 4 Green Onions, chopped
  • 1/3 cup Chopped Parsley
  • 1 tbsp Fresh Mint

  • 1/2 Lemon, juiced

Instructions

  1. Prepare the Potatoes: Wash the baby potatoes thoroughly then cut them into bite-sized pieces. Place the potatoes in a large pot filled with salted cold water.
  2. Cook the Potatoes: Bring the water to a boil and cook the potatoes until they are fork tender, which should take about 15 to 20 minutes. While the potatoes cook, chop the green onions, parsley, and fresh mint and set them aside.
  3. Drain and Combine: Once the potatoes are cooked, drain them well and transfer to a large mixing bowl.
  4. Add Herbs and Seasoning: To the potatoes, add the chopped green onions, parsley, mint, extra virgin olive oil, lemon juice, sea salt, sumac, and Aleppo pepper. Gently toss everything together to combine the flavors without mashing the potatoes.
