  2. Combine ingredients: Pour the cold water into a cezve (small Turkish coffee pot). Add the ground coffee and sugar, if using. Stir gently at this point just to dissolve coffee and sugar completely. Avoid stirring after this step to preserve foam formation.
  3. Heat the coffee: Place the cezve on medium heat on the stovetop. As it heats, the coffee mixture will begin to rise and form a thick foam.
  4. Remove before boiling: When the coffee is about to boil and rises with foam, immediately remove the cezve from heat to prevent boiling over.
  5. Serve the foam: Skim some foam off the top and spoon a little into each serving cup to ensure a rich texture.
  6. Reheat: Return the cezve to the heat and allow the coffee to foam up a second time slowly without boiling.
