Ingredients

For the Batter

  • 2 eggs (use pasteurized if preferred)
  • 1 3/4 cups powdered sugar
  • 1/4 tsp baking soda
  • 1/2 oz rum (white or dark)

For the Drink

  • Whole milk (heated, about 1 cup per serving)
  • Water (hot, for warming mugs)
  • 1 oz rum per drink
  • 1/2 oz brandy (or Cognac)
  • Freshly grated nutmeg, for garnish

Instructions

  1. Prepare the Batter: Beat 2 eggs thoroughly with a stand or hand mixer. Gradually add 1/2 cup powdered sugar and mix until combined; scrape bowl sides and add another 1/2 cup powdered sugar, mixing again.
  2. Add Baking Soda and Rum: Incorporate 1/4 tsp baking soda and 1/2 oz rum to the batter, mixing until fully combined.
  3. Whip Batter Stiff: Add remaining 3/4 cup powdered sugar and beat until the mixture forms stiff peaks.
  4. Store Batter: Transfer batter to an airtight container and refrigerate until use, stirring if separated.
  5. Optional Cooked Egg Base: For raw egg safety, beat eggs and powdered sugar as above, then pour batter into a saucepan and cook over medium-low heat, stirring constantly until thickened and reaching 160°F. Remove from heat and cool before adding baking soda and rum. Store chilled up to 3 days.
  6. Heat Mug: Fill a mug with hot water to warm it, then discard the water.
  7. Heat Milk: Warm about 1 cup whole milk on the stove or microwave until hot but not boiling.
  8. Assemble Drink: Place 1 tbsp of batter into the warmed mug, add 3 tbsp heated milk and stir to dissolve the batter.
  9. Add Spirits: Stir in 1 oz rum, fill the mug with remaining heated milk, leaving room for brandy.
  10. Top with Brandy and Garnish: Add 1/2 oz brandy on top of the drink and grate fresh nutmeg over the surface as garnish.
