Ingredients

2 teaspoons instant espresso powder

1 teaspoon vanilla extract

1/2 cup all-purpose flour

1/4 teaspoon baking powder

For the Topping:

8 ounces mascarpone cheese, at room temperature

1 cup cold heavy cream

1/4 cup powdered sugar

1 teaspoon vanilla extract

1 teaspoon instant espresso powder

1 tablespoon unsweetened cocoa powder

For Dusting:

3 tablespoons unsweetened cocoa powder

Instructions

  1. Make the Brownies: Preheat the oven to 350°F (175°C) and line an 8×8-inch square baking pan with parchment paper. In a saucepan, melt the butter and chopped chocolate together. Mix the sugars into the chocolate mixture. Add eggs, espresso powder, vanilla, and salt. Stir in the flour and baking powder, then bake for 25-30 minutes until the center is set but moist.
  2. Make the Topping: Beat mascarpone cheese and heavy cream until soft peaks form. Add powdered sugar, vanilla, and espresso powder. Continue mixing until stiff peaks form.
