Ingredients

4 boneless, skinless chicken breasts (6 oz each)

Salt, to taste

Freshly ground black pepper, to taste

1 tbsp olive oil (high-quality)

1 cup fresh blueberries (reserve a few for garnish)

2 tbsp balsamic vinegar

1 tbsp honey

2 tsp fresh thyme leaves (or 1 tsp dried thyme)

Instructions

  1. Season chicken breasts with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat.
  3. Sear chicken for 6–7 minutes per side, or until golden and cooked through (internal temp: 165°F).
  4. In a bowl, mix blueberries, balsamic vinegar, honey, and thyme.
  5. Add the blueberry sauce to the skillet with the chicken.
  6. Simmer for 3–4 minutes, stirring occasionally, until the sauce thickens slightly.
  7. Garnish with reserved blueberries and serve hot.

Notes

  • Marinate chicken with olive oil, blueberries, thyme, and lemon juice for 30 minutes or overnight for extra flavor.
  • Frozen blueberries can be used—thaw and drain well first.
  • Serve with coconut rice, roasted vegetables, or a fresh Caesar salad.
  • Let chicken rest for 5 minutes after cooking to lock in juices.
