Ingredients

Mascarpone Cream

  • 1 1/4 cups mascarpone cheese
  • 2 cups heavy whipping cream

Instructions

  1. Prepare Mascarpone Cream: In a medium mixing bowl, beat the mascarpone cheese until it becomes soft and smooth. Add the heavy whipping cream, sugar, and vanilla extract, then beat the mixture until stiff peaks form, which should take about 3 minutes.
  2. Mix Coffee and Rum: In a shallow dish, combine the strongly brewed coffee with the dark rum or coffee liqueur if using, creating a flavorful dipping liquid for the ladyfingers.
  3. Dip Ladyfingers: Quickly dip each ladyfinger into the coffee mixture—in and out instantly—to prevent sogginess. Arrange them in a single layer at the bottom of an 8×8 inch baking dish.
  4. Assemble Layers: Spread half of the mascarpone cream evenly over the layer of ladyfingers. Add another layer of dipped ladyfingers on top, followed by the remaining mascarpone cream spread evenly.
  5. Chill and Serve: Dust the top generously with cocoa powder. Cover the dish with plastic wrap and refrigerate for at least 3 hours to allow the flavors to meld and the dessert to set before serving.
