Ingredients

For the Pudding:

3 (1 oz.) boxes vanilla instant pudding mix (or 1 large 3 oz. box)

2 tablespoons Biscoff cookie butter, softened

1 (14 oz.) can sweetened condensed milk

23 cups VERY COLD filtered water (or milk for a creamier version)

1 teaspoon vanilla extract

Pinch of ground cinnamon

Pinch of sea salt

For the Layers:

4 organic bananas, sliced

1 (11 oz.) box organic vanilla wafer cookies

1 (8 oz.) package Biscoff cookies, semi-crushed (leave some whole and some crushed)

23 cups whipped cream (store-bought or homemade)

For the Toppings:

Whipped cream (homemade or store-bought)

Crushed Biscoff cookies

Crushed organic vanilla wafer cookies

Caramel sauce for drizzle (store-bought or homemade)

Instructions

  1. To Make the Cookie Butter Vanilla Pudding:
In a mixing bowl, using a hand-mixer, combine the very cold water (or milk), vanilla pudding mixes, Biscoff cookie butter, and sweetened condensed milk. Mix on medium-high speed for 4-5 minutes until smooth and thickened. The mixture should resemble a creamy pudding consistency.

Add in the vanilla extract, cinnamon, and sea salt, then continue mixing for another minute to incorporate all ingredients.

  2. To Assemble the Pudding:
In a trifle bowl or your preferred dish, layer the vanilla wafer cookies and Biscoff cookies, followed by sliced bananas and the pudding mixture.

Add a few dollops of whipped cream and continue layering until all ingredients are used up.

  3. Garnish:
Garnish the top with whipped cream, crushed vanilla wafers, crushed Biscoff cookies, and a drizzle of caramel sauce (if desired).

  4. Chill:
Refrigerate the pudding for at least 4 hours before serving—overnight is best to allow all the flavors to meld together.

Notes

  • Use Milk: For an extra creamy pudding, substitute water with whole milk or half-and-half.

  • Add More Toppings: For extra flavor, top the pudding with chopped Biscoff cookies, extra caramel drizzle, or even chocolate shavings.

  • Banana Substitute: If you’re not a fan of bananas, try adding strawberries, raspberries, or even peaches for a fruity twist.
