Instructions

  1. Cook Bacon: Heat a large pot over medium heat and add the bacon. Cook until it is nearly crisp and brown, ensuring most of the fat has rendered out. Transfer the bacon to a plate lined with paper towels to cool and drain excess fat.
  2. Sauté Onions: In the same pot with the reserved bacon fat, cook the chopped onions for about 5 minutes until softened and translucent.
  3. Add Garlic and Peppers: Add the chopped garlic and chili peppers (jalapeno or habanero) to the pot. Stir and cook for approximately 2 minutes to release their aromas and flavors.
  4. Combine Remaining Ingredients: Stir in the brown sugar, maple syrup, brewed coffee, apple cider vinegar, smoked paprika, chili powder, and hot sauce. Bring the mixture to a boil, then reduce heat to a simmer.
