Ingredients

Sweet Potato Pancakes

  • 1 cup leftover mashed sweet potatoes
  • 2 large eggs
  • ½ cup milk
  • 2 tablespoons packed light brown sugar
  • 1 tablespoon maple syrup (plus more for serving)
  • ¾ cup all purpose flour
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • Pinch nutmeg
  • 2 tablespoons melted butter (plus more for cooking)

Instructions

  1. Mix Wet Ingredients: Place mashed sweet potatoes in a large bowl. Add eggs, milk, brown sugar, and maple syrup. Whisk thoroughly until the mixture is well combined and smooth.
  2. Add Dry Ingredients: Sprinkle flour, cinnamon, baking powder, salt, and nutmeg over the sweet potato mixture. Stir gently but thoroughly until the batter is smooth and consistent. Incorporate the melted butter and mix again until well blended.
  3. Cook Pancakes: Heat a large nonstick skillet over medium heat and add a small pat of butter. When the butter has melted and is sizzling slightly, drop ⅓ cup portions of batter onto the skillet. Cook until bubbles form on the pancake surface, about 2 to 4 minutes, then carefully flip and cook for another 2 to 3 minutes until golden brown and cooked through. Repeat until all batter is used, making roughly 8 pancakes.
  4. Serve Warm: Serve the pancakes warm, generously drizzled with additional maple syrup for extra sweetness and flavor.

Notes

  • Use leftover mashed sweet potatoes that are plain or lightly seasoned for best flavor.
  • Adjust the milk quantity slightly to achieve your desired batter consistency.
  • For extra flavor, add a dash of vanilla extract or a sprinkle of chopped nuts in the batter.
  • Butter or oil can be used for cooking the pancakes based on preference.
  • If you prefer a gluten-free version, substitute all-purpose flour with a gluten-free flour blend.
