Instructions

  1. Prepare the sweet potatoes: Cook the sweet potatoes by boiling, steaming, or baking until soft. This is crucial for a smooth batter and proper sweetness.
  2. Preheat and prepare the pan: Preheat your oven to 350°F (180°C) and line a 9″ x 6″ (23 cm x 15 cm) pan or a similar-sized baking dish with parchment paper to prevent sticking.
  3. Mix wet ingredients: In a large food processor, combine the cooked sweet potatoes, bananas, and plant-based milk. Process until the mixture is smooth and well-blended.
  4. Add dry ingredients: Add the ground oats, sugar, cocoa powder, ground hemp seeds, cinnamon (if using), and baking powder to the food processor. Mix until you get a smooth, sticky batter.
  5. Transfer and bake: Pour the batter into the prepared pan, spreading it evenly. Bake for 30-40 minutes, checking doneness by inserting a toothpick in the center. It should come out mostly clean but can be slightly crumbly.
