Ingredients

Brownie Layer

  • 1/2 cup unsalted butter, melted
  • 6 oz semi sweet chocolate chips (about 1 heaping cup)
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup all-purpose flour
  • 1/4 cup cocoa powder
  • 1/2 tsp kosher salt

Cookie Dough Layer

  • 1/2 cup butter, melted
  • 2/3 cup packed brown sugar
  • 2 tbsp white sugar
  • 2 egg yolks (whites discarded)
  • 1 tsp vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1/4 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp kosher salt
  • 1 cup semi sweet dark chocolate chips

Instructions

  1. Preheat and prepare pan: Preheat your oven to 350°F (175°C). Line a 9×13 inch baking dish with two pieces of parchment paper to ensure easy removal of Brookies after baking.
  2. Melt brownie ingredients: In a large microwave-safe bowl, combine 1/2 cup melted butter and 6 oz semi sweet chocolate chips. Microwave in 30-second intervals, stirring in between until the chocolate is fully melted, about 60-90 seconds total. Allow to cool for 5 minutes.
  3. Mix brownie batter: Add 1 cup granulated sugar, 3 eggs, and 1 tsp vanilla extract to the cooled chocolate mixture. Whisk vigorously until frothy, approximately 1 minute.
  4. Add dry ingredients to brownie batter: Incorporate 1/2 cup flour, 1/4 cup cocoa powder, and 1/2 tsp kosher salt. Whisk until combined and smooth.
  5. Spread brownie batter: Pour the brownie batter evenly into the lined baking pan, smoothing the surface with the back of a spoon. Set aside while preparing cookie dough.
  6. Melt butter for cookie dough: In a medium microwave-safe bowl, melt 1/2 cup butter. Stir in 2/3 cup brown sugar and 2 tbsp white sugar until mixture is smooth.
  7. Add wet ingredients to cookie dough: Mix in 2 egg yolks and 1 tsp vanilla extract thoroughly.
  8. Combine dry ingredients for cookie dough: Stir in 1 3/4 cups flour, 1/4 tsp baking powder, 1/2 tsp baking soda, and 1/4 tsp kosher salt until a dough forms.
  9. Incorporate chocolate chips in dough: Fold in 1 cup semi sweet dark chocolate chips evenly through the dough.
  10. Dollop cookie dough onto brownie layer: Using a teaspoon, drop small, uneven clumps of cookie dough over the top of the brownie batter—no need to shape them perfectly.
  11. Distribute cookie dough evenly: Continue dolloping to cover the brownie layer with cookie dough, using up all of the dough.
  12. Bake brookies: Place the pan in the preheated oven and bake uncovered for 30-35 minutes until edges are set and a toothpick inserted in a cookie dollop comes out mostly clean.
  13. Cool before serving: Remove from oven and let cool for at least 15 minutes before slicing to ensure the brookies hold their shape well.

Notes

  • Ensure the melted chocolate is not too hot before mixing with eggs to prevent scrambling.
  • Using parchment paper makes it easy to lift the brookies out of the pan for clean slicing.
  • Cookie dough dollops can be unevenly shaped; this adds to the rustic charm of the brookies.
  • Allow brookies to cool completely or refrigerate briefly if you prefer firmer slices.
  • For extra flavor, you can substitute semi sweet chocolate chips with dark or milk chocolate chips according to preference.
