Ingredients

Cake

  • 16 oz strawberries (rinsed and tops removed)
  • 1 box white cake mix
  • 3 eggs
  • 3/4 cup vegetable oil
  • 3 oz strawberry Jello mix

Frosting

  • 1/4 cup unsalted butter (softened)
  • 4 oz cream cheese (softened)
  • 1 tsp vanilla extract
  • 3 cups powdered sugar
  • 1/4 cup strawberry puree

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking the cake.
  2. Prepare Strawberry Puree: Place the strawberries in a blender or food processor and blend until smooth. Measure out 1 cup of this puree for the cake batter and set aside an additional 1/4 cup for the frosting.
  3. Mix Cake Batter: In a large mixing bowl, combine the white cake mix, eggs, and vegetable oil. Stir until well incorporated, then add the strawberry Jello mix and 1 cup of the strawberry puree. Mix thoroughly to combine all ingredients evenly.
  4. Prepare Baking Pan: Grease a 9×13 inch baking pan to prevent sticking. Pour the cake batter evenly into the prepared pan.
  5. Bake the Cake: Place the pan in the preheated oven and bake for 30 minutes, or until a toothpick inserted into the center comes out clean.
  6. Cool the Cake: Remove the cake from the oven and allow it to cool completely in the pan on a wire rack.
  7. Make the Frosting: While the cake cools, cream together the softened butter and cream cheese until smooth. Add the vanilla extract, powdered sugar, and 1/4 cup of strawberry puree. Beat together until the frosting is light and fluffy.
  8. Frost the Cake: Once the cake is fully cooled, spread the frosting evenly over the top. Slice and serve. Enjoy your fresh strawberry sheet cake!

Notes

  • Make sure the strawberries are fresh and ripe for the best flavor.
  • If you do not have fresh strawberries, frozen berries thawed and drained can be used as a substitute.
  • Ensure the cake is completely cooled before frosting to prevent the frosting from melting.
  • You can adjust the amount of strawberry puree in the frosting for a more or less intense flavor.
  • Store leftovers covered in the refrigerator for up to 3 days.
