Ingredients

Fruit Base

  • 3 cups (20 oz) fresh or frozen peaches, sliced (peeled if using fresh)
  • 3 cups strawberries, trimmed and quartered
  • 1 lemon, juiced

Cobbler Crust

  • 6 Tbsp butter, melted
  • 1 cup milk
  • 1 cup sugar
  • ½ tsp salt
  • ½ tsp cinnamon
  • 2 tsp baking powder
  • 2 cups all-purpose flour
  • ½ tsp vanilla extract
  • 1 tsp almond extract

Topping

  • ½ cup sugar
  • 2 Tbsp cornstarch
  • 2 cups boiling water

Instructions

  1. Preheat the oven: Set your oven temperature to 375°F (190°C) to prepare for baking the cobbler.
  2. Prepare the fruit base: Spray a 9×13 inch baking dish with cooking spray. Layer the sliced peaches and quartered strawberries evenly in the bottom of the dish. Drizzle the juice of one lemon over the fruit to add brightness and prevent browning.
  3. Make the cobbler crust: In a medium mixing bowl, combine the melted butter, milk, sugar, salt, cinnamon, baking powder, flour, vanilla extract, and almond extract. Mix until you have a batter-like consistency. Spread this mixture evenly over the fruit layer in the baking dish.
  4. Add topping mixture: Using the same bowl, stir together the remaining ½ cup sugar and the cornstarch. Sprinkle this mixture uniformly over the cobbler crust layer.
  5. Pour boiling water: Carefully pour the 2 cups of boiling water evenly over the entire cobbler layered in the baking dish. This will help create a delicious sauce as the cobbler bakes.
  6. Bake the cobbler: Place the dish in the preheated oven and bake for 1 hour until the crust is set and golden, and the fruit is bubbly. Remove from the oven and allow to cool slightly before serving.
  7. Serve: Enjoy the cobbler warm, ideally with a scoop of vanilla ice cream for an irresistible dessert.

Notes

  • For fresh peaches, be sure to peel for best texture; frozen peaches can be used without thawing.
  • The boiling water poured over the batter is essential to achieve the characteristic cobbler texture and sauce.
  • Use a 9×13 inch pan for even baking and correct proportions.
  • Leftovers can be refrigerated for up to 3 days and reheated before serving.
  • Vanilla ice cream or whipped cream pairs wonderfully with this cobbler.
