Ingredients

Strawberry Filling

  • 6 cups strawberries, sliced (approx. 2 pounds)
  • 1/2 cup sugar
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • 1/4 cup corn starch

Crumble Topping

  • 3/4 cup rolled oats
  • 3/4 cup all-purpose flour
  • 3/4 cup brown sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon sea salt
  • 1/2 cup unsalted butter, very cold (cubed or grated)

Instructions

  1. Preheat and Prepare: Preheat your oven to 350°F (175°C). Grease a 9×9 inch baking pan thoroughly on the bottom and sides to prevent sticking.
  2. Make Strawberry Filling: In the baking pan or a medium bowl, combine sliced strawberries, sugar, vanilla extract, lemon juice, and corn starch. Toss well until all ingredients are evenly mixed, then spread this strawberry mixture evenly at the bottom of the prepared pan.
  3. Prepare Crumble Topping: In a separate bowl, mix rolled oats, brown sugar, flour, vanilla extract, and sea salt. Add the very cold unsalted butter, either cubed or grated, into the oat mixture. Use a pastry cutter or your fingers to incorporate the butter into the dry ingredients until the mixture resembles pea-sized crumbs.
  4. Assemble and Bake: Evenly sprinkle the prepared oat crumble topping over the strawberry filling in the pan. Place the pan in the preheated oven and bake for 45 to 50 minutes, or until the crumble topping turns golden brown and the strawberry filling bubbles.
  5. Cool and Serve: Remove the crumble from the oven and allow it to cool for 10 to 15 minutes. Serve warm, optionally topped with fresh ice cream or whipped cream for an extra indulgence.
  6. Storage: Store any leftovers in an airtight container at room temperature or refrigerated for 5 to 7 days to maintain freshness.

Notes

  • Make sure the butter is very cold to achieve a perfect crumble texture.
  • If fresh strawberries are not available, frozen can be used but thaw and drain excess liquid before mixing.
  • For a nuttier flavor, add chopped nuts such as walnuts or pecans to the crumble topping.
  • Adjust sugar quantity based on the sweetness of your strawberries.
  • Serve warm with vanilla ice cream or freshly whipped cream for best flavor.
