Ingredients

Brownie Base

  • 1 box strawberry cake mix with pudding in the mix (e.g., Pillsbury)
  • 2 large eggs
  • 1/3 cup vegetable or canola oil (80 ml)
  • 1 teaspoon vanilla extract (5 ml)

Strawberry Frosting

  • 3/4 cup powdered sugar (90 g)
  • 2 tablespoons strawberry preserves (40 g, e.g., Bonne Maman)
  • 1 ½ tablespoons milk (22 ml)
  • 1 tablespoon cream cheese (15 g, optional)

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350°F (175°C). Grease an 8×8 inch baking pan with nonstick spray or line it with foil or parchment paper to prevent sticking.
  2. Mix Ingredients: In a large bowl, combine the strawberry cake mix, 2 large eggs, vegetable or canola oil, and vanilla extract. Mix thoroughly until well combined. You can use a spoon or an electric mixer, both yield good results.
  3. Bake the Brownies: Pour the batter evenly into the prepared pan and press down slightly. Bake for 18-22 minutes until the brownies are just done. Insert a toothpick in the center to test; it should come out with a few moist crumbs but not wet batter. Remove from oven and let cool completely.
  4. Prepare Frosting: In a small bowl, whisk together the powdered sugar, strawberry preserves, milk, and cream cheese (if using) until smooth and spreadable.
  5. Frost and Serve: Once the brownies have fully cooled, spread the strawberry frosting evenly over the top. Slice into 16 squares and serve.

Notes

  • Using a glass or metal baking dish lined with parchment paper helps with easy removal.
  • You may substitute cream cheese with additional milk or leave it out for a lighter frosting.
  • For an extra strawberry punch, swap regular strawberry preserves for a high-quality brand like Bonne Maman.
  • Ensure brownies are completely cooled before frosting to prevent melting.
  • These brownies store well in an airtight container in the refrigerator for up to 4 days.
