Ingredients

1 lb white button mushrooms (or baby bella), cleaned and trimmed

2 tablespoons olive oil

2 tablespoons butter, divided

3 garlic cloves, minced

1/2 teaspoon kosher salt

1 tablespoon Worcestershire sauce

1 tablespoon soy sauce

1/2 teaspoon paprika

1/2 teaspoon onion powder

1/2 teaspoon dried oregano

1/4 teaspoon dried tarragon

1/4 teaspoon black pepper

1/4 teaspoon chili powder

1 teaspoon browning sauce (optional)

2 tablespoons fresh chives, chopped (for garnish)

Instructions

  1. Heat olive oil and 1 tablespoon butter in a skillet over medium heat. Add mushrooms and sprinkle with kosher salt. Cook undisturbed for 3 minutes.
  2. Mix paprika, onion powder, oregano, tarragon, black pepper, and chili powder in a small bowl. Add spice mix and garlic to the mushrooms. Stir and cook 1–2 minutes.
  3. If using, stir in browning sauce and cook another 1–2 minutes.
  4. Add Worcestershire sauce and soy sauce. Cook 2–3 minutes, allowing liquid to reduce and coat mushrooms.
  5. Stir in remaining butter. Remove from heat, garnish with fresh chives, and serve hot.

Notes

  • Use cremini or portobello mushrooms for a meatier texture.
  • Add a splash of dry white wine for depth of flavor.
  • For vegan, use plant-based butter and sauces.
  • Don’t overcrowd the pan to avoid soggy mushrooms.
  • Best enjoyed hot but can be made ahead and reheated.
