Ingredients

1 tbsp olive oil

lbs sirloin steak, cut into bite-sized pieces (stew meat, strip loin, tenderloin, or ribeye also work)

½ tsp salt, or to taste

½ tsp black pepper, or to taste

2 tbsp unsalted butter

4 cloves garlic, minced

¼ tsp red pepper flakes (optional)

1 tbsp fresh parsley, chopped

Instructions

  1. Heat olive oil in a large skillet over high heat.
  2. Add steak bites in a single layer, season with salt and pepper, and cook undisturbed for 2 minutes to sear.
  3. Stir and cook for another 2 minutes until golden brown. Work in batches if necessary to avoid overcrowding.
  4. Remove steak from skillet and set aside. Reduce heat to medium.
  5. In the same skillet, melt butter, then add garlic and red pepper flakes. Cook for about 30 seconds until fragrant.
  6. Pour garlic butter over steak bites, toss to coat, and garnish with parsley. Serve immediately.

Notes

  • Stew meat can be used, but avoid overcooking for tenderness.
  • For best sear, pat meat dry before cooking and avoid overcrowding.
  • Add mushrooms or onions to the skillet for extra flavor.
  • Swap parsley with cilantro or thyme for variety.
  • Pairs well with mashed potatoes, rice, or crusty bread to soak up the sauce.
