Ingredients

Salad

  • 1 mini watermelon, or 1/4 of a regular watermelon – cut into wedges or bite sized pieces
  • 1/4 cup cilantro, chopped
  • 1/2 a jalapeño, thinly sliced or chopped (adjust heat to taste)

Dressing

  • 3 tablespoons lime juice
  • 2 tablespoons olive oil
  • 2 teaspoons honey
  • 1/2 teaspoon kosher salt
  • Pinch of red chili flakes (optional)
  • Flaky sea salt and extra red chili flakes for garnish

Instructions

  1. Cut the watermelon: Slice the watermelon into handheld-sized wedges or bite-sized pieces according to your preference.
  2. Make the dressing: In a small bowl, whisk together the lime juice, olive oil, honey, kosher salt, and red chili flakes. Then add the chopped cilantro and jalapeño, stirring to combine all the flavors evenly.
  3. Assemble for wedge serving: Arrange the watermelon wedges on a large serving platter or place individual wedges on salad plates. Spoon the prepared dressing over the watermelon, then sprinkle with flaky sea salt and an extra pinch of chili flakes if desired.
  4. Assemble for cubed watermelon serving: Place the cubed watermelon into a bowl, add the dressing, and gently toss to coat the pieces evenly. Serve topped with extra cilantro, jalapeño slices, flaky sea salt, and additional chili flakes if you like more heat.

Notes

  • You can adjust the amount of jalapeño or red chili flakes to control the spice level based on your preference.
  • Using fresh lime juice ensures the best vibrant flavor in the dressing.
  • Flaky sea salt adds a nice crunchy texture and burst of saltiness as a garnish.
  • This salad is best served fresh to enjoy the crisp texture of watermelon.
  • For a non-spicy version, omit the jalapeño and chili flakes.
