1 tablespoon hemp hearts

¼ cup fresh parsley, chopped

Juice of ½ lemon

1 tablespoon tamari (or soy sauce)

1 tablespoon olive oil

Salt and black pepper, to taste

Instructions

  1. Wash and thinly slice the cucumber into rounds. Place in a large bowl.

  3. Drizzle with lemon juice, tamari, and olive oil. Season with salt and pepper to taste.
  4. Gently toss everything together until well combined. Serve immediately for best texture.

Notes

  • Add cherry tomatoes or bell peppers for more color and crunch.
  • Include cooked quinoa or soba noodles for a more filling version.
  • Swap tuna for eggs, salmon, or tofu.
  • Sprinkle with sesame seeds or nuts for added texture.
  • Use cilantro or mint instead of parsley.
  • Add a drizzle of sesame oil or hot sauce for extra flavor.
  • Serve in lettuce cups for a low-carb presentation.
