Ingredients

Noodles

  • 16 ounces brown rice noodles

Peanut Sauce

  • 3 large cloves garlic (or 4-5 small), finely minced
  • 1 tablespoon fresh grated ginger
  • 1 tablespoon oil (olive or any preferred cooking oil)
  • 2/3 cup creamy peanut butter
  • 4 tablespoons low sodium tamari or soy sauce
  • 1/3 to 1 cup hot water
  • 1 tablespoon rice vinegar
  • 1 tablespoon toasted sesame oil
  • 1-2 tablespoons sriracha
  • 1-2 tablespoons maple syrup or honey
  • 1/2 teaspoon red pepper flakes (optional, can omit for less spice)
  • Optional: 2 teaspoons chili garlic sauce

Optional Garnishes

  • Crushed peanuts
  • Scallions
  • Extra red pepper flakes

Instructions

  1. Boil water: Bring a large pot of water to a rolling boil, preparing it for the noodles.
  2. Cook noodles: Add the brown rice noodles to the boiling water and cook according to package instructions until tender but firm. Drain and set aside.
  3. Sauté garlic: Finely mince the garlic cloves. Heat 1 tablespoon of oil in a sauté pan over low heat and add the minced garlic.
  4. Sauté garlic and ginger: Cook the garlic for about 2 minutes until golden brown, then add the freshly grated ginger and sauté for an additional 1 minute to release its aroma.
  5. Prepare the sauce: Remove the pan from heat. Add the peanut butter, tamari (or soy sauce), rice vinegar, toasted sesame oil, sriracha, maple syrup (or honey), red pepper flakes, and chili garlic sauce if using. Begin by whisking in 1/3 cup of hot water, mixing until smooth.
  6. Adjust sauce consistency: Slowly add more hot water as needed (up to 1 cup total) to achieve your preferred sauce thickness and creaminess. It should be smooth and pourable but not watery.
  7. Taste and season: Taste the sauce and adjust seasonings as desired, adding more tamari, sriracha, or sweetener to balance saltiness, heat, and sweetness to your liking.
  8. Combine noodles and sauce: Place the cooked noodles in a large bowl and add about half of the peanut sauce. Toss gently to coat all noodles evenly.
  9. Adjust sauce amount: Taste the noodles to check if you’d like more sauce. Gradually add the remaining sauce as preferred, ensuring you don’t overdress the noodles initially.
  10. Serve and garnish: Plate the noodles and sprinkle with crushed peanuts, chopped scallions, and extra red pepper flakes if desired. Serve immediately alongside your choice of vegetables, tofu, or protein for a complete meal.

Notes

  • Use hot water when mixing the peanut sauce to help it combine smoothly without lumps.
  • Adjust the spiciness by varying the amount of sriracha and red pepper flakes.
  • Brown rice noodles can be substituted with other types of noodles based on preference.
  • Reserve some sauce for adding later if serving with additional protein or vegetables to keep everything flavorful.
  • This dish is vegetarian and can be made vegan by using maple syrup instead of honey.
