Ingredients

1 cup jasmine rice (or preferred rice)

2 cups water (for rice)

3 tbsp soy sauce

1 tbsp chili paste

12 tsp sriracha (adjust to spice preference)

1 tbsp honey

1/2 tsp ground ginger

1 tsp sesame oil

1 tsp fish sauce (optional)

3 garlic cloves, minced

1 tbsp avocado oil (or olive oil)

1 lb lean ground beef

1 yellow onion, diced

1 bell pepper, diced

2 green onions, sliced (for garnish)

Instructions

  1. Cook rice according to package directions; keep warm.
  2. In a bowl, whisk together soy sauce, chili paste, sriracha, honey, ground ginger, sesame oil, fish sauce, and garlic. Set aside.
  3. Heat avocado oil in a large skillet over medium heat. Add ground beef and cook, breaking apart, until browned (8–10 minutes).
  4. Add onion and bell pepper. Cook until softened, about 5 minutes.
  5. Pour sauce mixture over beef and veggies. Stir and cook 2 minutes until sauce thickens and coats evenly.
  6. Divide rice into bowls, top with beef stir-fry, and garnish with sliced green onions. Serve hot.
