Ingredients

Cocktail

  • 2 ounces High Goal Luxury Gin
  • 1/2 ounce freshly squeezed lemon juice
  • 1 ounce spiced pear simple syrup (adjust to taste)
  • Club soda (Betty Buzz Meyer Lemon Club Soda recommended)
  • Pear slice, thyme sprig, star anise for garnish

Instructions

  1. Make the Spiced Pear Simple Syrup: Combine the diced pear, granulated sugar, water, vanilla extract, cinnamon, nutmeg, ground ginger, and allspice in a small pot. Bring the mixture to a boil over medium heat, then reduce the heat and let it simmer for 5 minutes, stirring frequently to dissolve the sugar and infuse the flavors.
  2. Cool and Strain Syrup: Remove the pot from heat and let the syrup cool for about 5 minutes. Then strain the mixture through a fine mesh sieve into a container to remove the solids. Chill the syrup until completely cool. This will yield about 1/2 cup of spiced pear syrup, which can be stored in an airtight container in the refrigerator for up to 2 weeks.
  3. Prepare the Sugared Rim (Optional): Mix together the granulated sugar, gold sanding sugar, vanilla sugar, ground cinnamon, and a tiny pinch of nutmeg on a plate. Moisten the rim of each cocktail glass with a lemon wedge, then dip the rim into the sugar mixture to coat evenly.
