Ingredients

Gumdrops

  • 1/2 cup lemon juice (from a bottle is fine)
  • 1/2 cup water
  • 2 tbsp powdered sweetener
  • 3 tbsp gelatin

Coating

  • 1/2 cup granular sweetener (1:1 ratio)
  • 1 tsp citric acid (food grade, granular)
  • 8 drops yellow food coloring (optional)

Instructions

  1. Mix the base ingredients: In a small saucepan over very low heat, combine the lemon juice, water, and powdered sweetener. Stir gently to mix without boiling.
  2. Add gelatin gradually: Slowly sprinkle in the gelatin a little at a time while continuously stirring to avoid lumps forming.
  3. Dissolve gelatin completely: If any gelatin chunks appear, keep stirring until they dissolve fully for a smooth mixture.
  4. Strain mixture: Pour the warm mixture through a wire sieve into a measuring cup or vessel with a pouring spout to remove any remaining solids.
  5. Mold the gumdrops: Pour the strained liquid into silicone molds and refrigerate until fully set and firm.
  6. Prepare crunchy coating: Combine the granulated sweetener, citric acid, and yellow food coloring in a glass jar with a lid. Shake well to combine evenly.
  7. Coat gumdrops before eating: Place a few gumdrops at a time into the jar, shake to coat with the sour crunchy coating, then transfer coated gumdrops to a tray. Repeat as needed.
  8. Store coating separately: Only coat the amount of gumdrops you intend to eat immediately to prevent them from releasing liquid. Save the coating mix to use fresh each time.
