  • 1 can (14.5 oz) Diced tomatoes or 2 cups fresh diced tomatoes
  • 1/2 white onion, chopped
  • 3 garlic cloves, peeled
  • 10 cups vegetable stock
  • 1 Mexican zucchini, diced
  • 1 lime, cut into quarters

Instructions

  1. Boil the stock: In a medium pot, bring the vegetable stock to a rolling boil, then set aside to keep hot while preparing the soup.
  2. Toast the noodles: Heat a large pot over medium heat and add the oil. Once the oil is hot, add the broken-up noodles and toss to coat in the oil. Continue to cook, stirring frequently, until the noodles turn golden brown, about 3 minutes.
  3. Blend the tomato base: While noodles are toasting, combine diced tomatoes, chopped onion, garlic cloves, and 2 cups of the hot vegetable stock in a blender. Process until the mixture is smooth.
  4. Strain and combine: Strain the blended tomato mixture directly into the pot with the toasted noodles. Stir well to prevent the noodles from sticking.
  5. Simmer and add zucchini: Let the mixture simmer gently for 1 minute. Then add the remaining vegetable stock, increase heat to high, and bring to a low boil. Add the diced zucchini and continue cooking until noodles are al dente and zucchini becomes tender, stirring often.
  6. Serve: Ladle soup into bowls and serve with a wedge of lime on the side, allowing each person to add fresh lime juice to taste.
