Ingredients

14 ounces avocado, cubed

8 slices sprouted wheat bread

8 eggs

2 cups water

2 tablespoons white wine vinegar

1/4 teaspoon salt

1/2 teaspoon pepper

1 tablespoon olive oil

1/4 cup cilantro

1 ounce arugula

6 ounces cherry tomatoes

1.5 ounces pan-fried bacon

0.25 ounce cheddar cheese

Instructions

  1. Crack an egg into a bowl and bring 2 cups of water to a boil. Reduce heat to maintain a light bubble.
  2. Stir water with 2 tablespoons white wine vinegar to create a vortex, then gently drop the egg in.
  3. Poach each egg for around 1 minute, then remove with a ladle and drain on paper towels.
  4. Arrange bread slices on a baking sheet, brush with olive oil, and bake at 450°F for 3 minutes.
  5. Mash avocado with salt and pepper until creamy.
  6. Spread mashed avocado over toasted bread slices.
  7. Top each with arugula, bacon, and a poached egg. Garnish with cheddar cheese and black pepper.
