Ingredients

Sauce Ingredients

  • 1/2 cup soy sauce (120 ml)
  • 1/2 cup ketchup (120 ml)
  • 1/2 cup honey (170 g)
  • 6 cloves garlic (minced)
  • 1/2-1 teaspoon ginger (minced, or 1/4 teaspoon ground ginger)
  • 1 teaspoon rice wine vinegar (5 ml)

Chicken

  • 8 boneless skinless chicken thighs (about 1 1/2 lbs)

Thickening Slurry

  • 2 tablespoons cornstarch (16 g)
  • 2 tablespoons water (30 ml)

Instructions

  1. Prepare Sauce: In a small bowl, whisk together soy sauce, ketchup, honey, minced garlic, ginger, and rice wine vinegar until smooth and fully combined.
  2. Add Chicken to Slow Cooker: Place the boneless skinless chicken thighs into the slow cooker. Pour the prepared honey garlic BBQ sauce evenly over the chicken. Turn each piece to ensure it is fully coated in the sauce. (Optional: Before adding to the slow cooker, you may sear the chicken and sauté the garlic for a deeper flavor.)
  3. Cook Chicken: Cover the slow cooker and cook on low for 5-6 hours or on high for 3-4 hours, until the chicken reaches an internal temperature of 165°F (74°C) and is tender.
  4. Make Cornstarch Slurry: In a separate small bowl, whisk together the cornstarch and water until a smooth slurry forms.
  5. Thicken Sauce: Stir the cornstarch slurry into the slow cooker with the chicken and sauce. Mix well to combine. Continue cooking using the sauté mode on the slow cooker or keep on high slow cook mode for about 15 minutes until the sauce thickens to a sticky, glossy consistency.
  6. Serve: Serve the honey garlic BBQ chicken thighs hot, ideally over rice or noodles to soak up the delicious sauce.

Notes

  • You can sear the chicken thighs before adding to the slow cooker for extra flavor and texture.
  • Adjust ginger quantity based on preference for more or less spiciness.
  • Use a meat thermometer to ensure chicken reaches a safe internal temperature of 165°F (74°C).
  • If your slow cooker does not have a sauté mode, you can transfer the sauce to a pan on the stovetop to thicken it before serving.
  • Leftovers store well refrigerated for up to 3 days and freeze beautifully.
