Ingredients

3 tablespoons extra-virgin olive oil, divided

4 boneless, skinless chicken breasts (about 8 ounces each)

Kosher salt and freshly ground black pepper

2 garlic cloves, finely chopped

1 tablespoon fresh thyme leaves

1 teaspoon crushed red pepper flakes

3/4 cup low-sodium chicken broth

1/2 cup chopped sun-dried tomatoes

1/2 cup heavy cream

1/4 cup finely grated Parmesan

Fresh basil leaves, torn, for serving

Instructions

  1. Preheat oven to 375°F (190°C). Heat 1 tablespoon olive oil in a large ovenproof skillet over medium-high heat.
  2. Season chicken breasts with salt and pepper. Sear for 5 minutes per side until golden brown. Transfer to a plate.
  3. In the same skillet, heat remaining 2 tablespoons olive oil. Add garlic, thyme, and red pepper flakes; cook 1 minute until fragrant.
  4. Stir in broth, sun-dried tomatoes, heavy cream, and Parmesan. Season with salt and simmer briefly.
  5. Return chicken and juices to skillet, coating with sauce.
  6. Transfer skillet to the oven and bake for 10–12 minutes, until chicken is cooked through (165°F / 74°C internal temperature).
  7. Spoon sauce over chicken and top with fresh basil before serving.

  • Use chicken thighs instead of breasts for juicier results.
