Ingredients

2 lbs boneless skinless chicken thighs

1 packet ranch seasoning mix

8 oz cream cheese

8 slices bacon, cooked and drained

1 cup shredded cheddar cheese

2 green onions, sliced

Instructions

  1. Place chicken thighs in the slow cooker and sprinkle with ranch seasoning mix.
  2. Add cream cheese on top of the chicken.
  3. Cover and cook on low for 7 hours without lifting the lid.
  4. Shred the chicken directly in the slow cooker using two forks.
  5. Stir in cooked bacon and mix the cream cheese into the chicken evenly.
  6. Top with shredded cheddar cheese, cover, and cook an additional 10 minutes until the cheese melts.
  7. Garnish with green onions and serve warm over rice, baked potatoes, or on sandwich rolls.

Notes

  • Use chicken breasts instead of thighs if preferred.
  • Add jalapeños or spicy ranch mix for a heat kick.
  • For a lower-fat version, use reduced-fat cream cheese and turkey bacon.
  • Add vegetables like broccoli, spinach, or mushrooms during the last hour of cooking.
