Ingredients

Beef and Vegetables

  • 1.2 kg Stir fry beef
  • 2 Bell peppers, sliced
  • 1 Carrot, julienned
  • 1/2 Sweet onion, optional, sliced

Liquids

  • 200 mL Tomato sauce
  • 1/4 cup Broth

Fajita Seasoning

  • 1 tablespoon Chili powder
  • 1.5 tablespoons Cumin
  • 1/2 teaspoon Paprika
  • 1 teaspoon Salt
  • 2 teaspoons Garlic powder

Instructions

  1. Prepare the Vegetables: Slice the bell peppers into strips and julienne the carrot. If using, slice the sweet onion as well. This ensures all veggies cook evenly and blend perfectly with the beef.
  2. Add Ingredients to Slow Cooker: Place the stir fry beef along with the prepared bell peppers, carrot, and optional onion into the slow cooker, layering the ingredients for even cooking.
  3. Add Liquids: Pour the tomato sauce and broth evenly over the beef and vegetables, providing moisture and flavor as the dish cooks.
  4. Mix Seasoning: In a small bowl, combine chili powder, cumin, paprika, salt, and garlic powder to make a homemade fajita seasoning. Sprinkle this mixture over the ingredients in the slow cooker.
  5. Combine and Cook: Gently mix all the ingredients to evenly distribute the seasoning. Cover and cook on low for 8 hours, allowing the beef to become tender and flavors to meld beautifully.

Notes

  • For extra heat, add a pinch of cayenne pepper or some chopped jalapeños to the seasoning mix.
  • Serve with warm tortillas, sour cream, guacamole, and fresh cilantro for a complete fajita experience.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
  • If you prefer, use chicken or pork instead of beef for variation.
  • Adding the onion is optional but recommended for added sweetness and depth of flavor.
