Ingredients

1 bunch kale (lacinato or curly kale)

2 teaspoons extra-virgin olive oil

2 garlic cloves, chopped

Sea salt, to taste

Freshly ground black pepper, to taste

1 lemon wedge, for squeezing

Instructions

  1. Remove and discard the coarse stems of the kale. Chop or tear the leaves into bite-sized pieces.
  2. Heat olive oil in a large skillet over medium heat.
  3. Add kale, garlic, a pinch of salt, and several grinds of black pepper.
  4. Sauté for 2–4 minutes, tossing with tongs, until the kale wilts down and becomes tender.
  5. Turn off the heat, squeeze fresh lemon juice over the kale, and toss.
  6. Adjust seasoning to taste and serve immediately.

Notes

  • Add a pinch of red pepper flakes for heat.
  • Sprinkle with toasted nuts or seeds for crunch.
  • Stir in a splash of white wine for depth of flavor.
  • Use baby kale for a more tender texture.
  • Add Parmesan cheese before serving for a savory finish.
