Ingredients

1 cup all-purpose flour

2 teaspoons baking powder

Pinch of salt (optional)

1 cup + 2 tablespoons cottage cheese (2% or 4%)

1 egg (optional)

Toppings: everything seasoning, poppy seeds, sesame seeds

Instructions

  1. In a medium bowl, combine the flour and baking powder. Add a pinch of salt if desired.
  2. Make a well in the center of the flour mixture and add the cottage cheese. Mix using a fork or rubber spatula until a chunky dough begins to form.
  3. Transfer the dough onto a floured surface and knead for 1-2 minutes until it forms a semi-smooth ball. Add more flour if the dough becomes sticky.
  4. Divide the dough into 4 equal portions. Roll each portion into a 6-7 inch log, about ¾ inch thick. Connect the ends of each log to form a bagel.
  5. In a small bowl, whisk the egg with a splash of water or milk. Brush the egg wash over each bagel and sprinkle your desired toppings.
  6. Preheat the air fryer to 300°F (150°C). Spray the air fryer basket with cooking spray or line it with parchment paper. Arrange the bagels in a single layer in the basket.
  7. Air fry for 15-17 minutes, or until the bagels are golden brown and fluffy. Check around the 10-minute mark and continue cooking as needed.
  8. Remove the bagels from the air fryer and let them cool for at least 15 minutes before slicing and serving.
