Ingredients

Instructions

  1. Prepare the Marinade: In a large bowl, whisk together plain yogurt, fresh lemon juice, olive oil, tomato paste, crushed garlic, paprika, salt, allspice, cayenne pepper, and black pepper until smooth and well combined. This mixture will tenderize and flavor the chicken.
  2. Marinate the Chicken: Add the chicken thigh pieces to the marinade and toss thoroughly to coat each piece evenly. Cover the bowl with plastic wrap and refrigerate for at least 1 hour to allow the flavors to penetrate, or up to 24 hours for maximum tenderness and taste.
  3. Skewer the Chicken: Remove the chicken from the marinade and thread the pieces onto skewers. Distribute the chicken equally onto 6 skewers, so that each serving gets one skewer, ensuring even cooking on the grill.
