Ingredients

¼ cup sesame seeds

1 (16-ounce) package bow tie pasta

½ cup vegetable oil

⅓ cup light soy sauce

⅓ cup rice vinegar

1 teaspoon sesame oil

3 tablespoons white sugar

½ teaspoon ground ginger

¼ teaspoon ground black pepper

3 cups shredded, cooked chicken breast

⅓ cup chopped fresh cilantro

⅓ cup chopped green onion

Instructions

  1. Toast sesame seeds in a dry skillet over medium-high heat until golden and fragrant. Set aside.
  2. Bring a large pot of salted water to a boil. Cook bow tie pasta until al dente, about 8–10 minutes. Drain and rinse under cold water. Transfer to a large mixing bowl.
  3. In a jar or bowl, combine vegetable oil, soy sauce, rice vinegar, sesame oil, sugar, toasted sesame seeds, ground ginger, and black pepper. Shake or whisk until fully emulsified.
  4. Pour the dressing over the cooled pasta and toss until well-coated.
  5. Gently fold in the shredded chicken, chopped cilantro, and green onions.
  6. Serve immediately or refrigerate for several hours to allow flavors to meld.

Notes

  • Tastes even better after chilling for a few hours or overnight.
  • To reduce oil, use only 1/3 or 1/4 cup of vegetable oil in the dressing.
  • Add extra vegetables like shredded carrots or snap peas for crunch.
  • Substitute gluten-free pasta and tamari for a gluten-free version.
  • Use rotisserie or grilled chicken for added flavor and convenience.
