Ingredients

3 packs pasture-raised chicken drumsticks (about 1315 drumsticks)

34 tablespoons extra virgin olive oil

2 teaspoons sea salt

2 teaspoons garlic powder

2 teaspoons chili powder

2 teaspoons oregano

1 teaspoon paprika

1 teaspoon ground black pepper

Instructions

  1. Preheat oven to 420°F (215°C).
  2. Pat chicken drumsticks dry with paper towels.
  3. Place drumsticks in a large bowl and drizzle with olive oil. Toss to coat.
  4. Add sea salt, garlic powder, chili powder, oregano, paprika, and black pepper. Mix to coat evenly.
  5. Place a wire rack on a baking sheet and spray it with oil.
  6. Arrange drumsticks in a single layer on the rack.
  7. Bake for 35 minutes, flip, then bake an additional 15 minutes until golden and crispy.
