  • 1/2 teaspoon black pepper powder (adjust to taste)
  • 2 tablespoons corn starch

Instructions

  1. Preparing: In a bowl, mix the chicken thigh pieces with soy sauce, oyster sauce, black pepper powder, and corn starch. Let this mixture marinate for 10 minutes while you chop the scallions, separating the white parts from the green parts.
  2. Pan frying chicken: Heat oil in a non-stick pan over medium heat. Add the marinated chicken pieces and pan fry them, stirring occasionally, until fully cooked and nicely browned on the outside.
  3. Adding scallions: Add the white parts of the scallions into the pan with the chicken. Cook them until they soften. For larger pieces of chicken or pieces with bones, cover the pan with a lid to ensure thorough cooking. Finally, stir in the green parts of the scallions and cook for an additional 10-20 seconds to just soften them.
  4. Serving: Taste and sprinkle extra black pepper or more chopped scallions if desired. Serve this flavorful scallion chicken hot with steamed rice or noodles for a complete meal.
