Masala French Toast, or Savory Bombay Toast, is a spiced Indian twist on classic French toast. Made with onions, chilies, cilantro, turmeric, and eggs, it’s a flavorful and satisfying breakfast or brunch dish ready in just 20 minutes.

Ingredients

2 large eggs

2 tablespoons red onion, finely minced

1 green chili, finely minced (or jalapeño)

¼ teaspoon ground turmeric

¼ teaspoon kosher salt

2 tablespoons fresh cilantro, finely chopped

2 tablespoons milk or water

2 slices bread (sourdough, multigrain, or whole wheat)

1 teaspoon oil (for frying)

To serve: ketchup and cilantro-mint chutney

Instructions

  1. In a wide bowl, whisk together onion, green chili, turmeric, salt, cilantro, and milk. Add eggs and whisk until combined.
  2. Dip one slice of bread into the mixture, pressing lightly so it absorbs the flavors. Flip and coat the other side.
  3. Heat ½ teaspoon oil in a skillet over medium heat. Place coated bread in the skillet and spoon some extra onion mixture on top.
  4. Cook for 1 minute, or until golden brown on the bottom. Flip and cook the other side until golden.
  5. Repeat with the second slice. Serve hot with ketchup and green chutney.

Notes

  • Don’t soak bread too long—just dip and coat to avoid sogginess.
  • For extra spice, add red chili powder or more green chilies.
  • Sprinkle cheese on top before flipping for a cheesy twist.
  • Best eaten fresh, but leftovers can be stored in the fridge for 1 day.
