Instructions

  2. Cook Sausage: Remove the sausage meat from the casing and cook it in a medium skillet over medium-high heat until browned and no longer pink inside. Once cooked, set aside the sausage meat and allow it to cool slightly.
  3. Mix Wet Ingredients: In a large mixing bowl, whisk together the eggs, milk, cottage cheese, olive oil, and maple syrup until well combined and smooth.
  4. Add Dry Ingredients: To the same bowl, add the all-purpose flour, baking powder, and salt. Mix thoroughly using a wooden spoon or silicone spatula until a uniform batter forms.
  5. Combine Add-ins: Fold in the cooked sausage meat, chopped vegetables, green onions, and shredded cheddar cheese. Reserve some cheese to sprinkle on top of each muffin.
