Ingredients

Base

  • 40 saltine crackers

Toffee Layer

  • 1 cup butter, cubed
  • 3/4 cup light brown sugar
  • 1 teaspoon vanilla extract

Toppings

  • 2 cups semisweet chocolate chips
  • 8 oz. English toffee bits (milk chocolate English toffee bits)

Instructions

  1. Prepare the Pan: Line a 15x10x1-inch baking pan with heavy-duty foil. Spray the foil with vegetable cooking spray to prevent sticking. Arrange the saltine crackers in a single layer on the foil and set aside.
  2. Make the Toffee Sauce: In a large heavy saucepan over medium heat, melt the cubed butter. Stir in the light brown sugar and bring the mixture to a boil. Cook and stir continuously for 30 seconds to fully integrate and slightly thicken the toffee. Remove the saucepan from heat and stir in the vanilla extract.
  3. Bake toffee over crackers: Pour the hot toffee sauce evenly over the arranged saltine crackers in the prepared pan. Bake in a preheated oven at 350°F (175°C) for 8-10 minutes or until the toffee mixture is bubbly and spreading slightly.
  4. Add Chocolate and Toffee Bits: Immediately after removing the pan from the oven, sprinkle the semisweet chocolate chips evenly over the hot toffee layer. Allow the chocolate chips to sit for a few minutes until they soften, then spread them evenly over the toffee with a spatula. Sprinkle the English toffee bits evenly on top.
  5. Set and Store: Let the toffee cool to room temperature, then cover and refrigerate for at least 1 hour or until completely set. Once firm, break into pieces. Store the Altine Toffee in an airtight container to maintain freshness.
