Ingredients

16 ladyfingers

250 g mascarpone

200 ml heavy cream

70 g powdered sugar

Zest of 1 lemon

1/2 tsp vanilla powder

2 sprigs red currants

A few strawberries

For garnish: fresh fruit (blackberries, strawberries, currants), fresh mint leaves, powdered sugar

Instructions

  1. Lightly soak the ladyfingers in milk and arrange them neatly on a tray lined with plastic wrap, being careful not to over-soak.
  2. In a bowl, whip together mascarpone, heavy cream, powdered sugar, vanilla, and lemon zest until smooth and fluffy.
  3. Spread the cream over the ladyfingers and add fresh fruit, pressing it gently so it blends into the cream.
  4. Roll up the ladyfingers using the plastic wrap, shaping into a slight pyramid.
  5. Refrigerate for at least 6 hours.
  6. Before serving, decorate with the remaining cream, fresh fruit, mint leaves, and a dusting of powdered sugar.
