Ingredients

Vegetables

  • 6 large red potatoes (rinsed, dried, and cubed with skin on, about 1 1/2 pounds)
  • 1 pound fresh green beans (rinsed, dried, and ends snapped)

Seasonings and Oil

  • 1½ tablespoons olive oil (divided)
  • 1/2 teaspoon garlic powder
  • 3/4 teaspoon paprika
  • 1 teaspoon dried parsley
  • 3/4 teaspoon salt (divided, or add more to taste)
  • 1/2 teaspoon black pepper (divided, or add more to taste)

Instructions

  1. Preheat Oven and Prepare Potatoes: Preheat your oven to 400 degrees Fahrenheit. Wash, dry, and evenly cut the potatoes into approximately one-inch cubes, keeping the skin on for added texture and nutrients.
  2. Prepare Green Beans: Rinse and dry the green beans thoroughly. Remove the pointy ends by snapping them off either with your hands, kitchen shears, or a sharp knife.
  3. Season Potatoes: In a large bowl, combine 1 tablespoon of olive oil, garlic powder, paprika, dried parsley, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Mix these seasonings well and add the cubed potatoes to the bowl. Toss until all potatoes are evenly coated.
  4. Season Green Beans: Using the same bowl (no need to clean), add the green beans. Drizzle with the remaining 1/2 tablespoon olive oil, 1/4 teaspoon salt, and 1/4 teaspoon pepper. Toss well until the green beans are fully coated in the oil and seasonings. Set aside.
  5. Roast Potatoes: Spread the seasoned potatoes in a single layer on a sheet pan. Roast them in the preheated oven for 15 minutes to start browning and softening.
  6. Add Green Beans and Continue Roasting: After 15 minutes, use a spatula to flip the potatoes. Add the green beans evenly around the potatoes on the pan. Roast everything together for an additional 20-25 minutes, or until the potatoes are golden brown and the green beans are tender.

Notes

  • For crispier potatoes, ensure they are spaced out evenly and not overcrowded on the baking sheet.
  • Adjust salt and pepper to your taste preferences.
  • Using fresh green beans is key to achieving the best flavor and texture.
  • This recipe pairs perfectly with grilled chicken or fish for a wholesome meal.
