Instructions

  1. Preheat Oven: Set your oven to 400°F to prepare for roasting the figs.
  2. Prepare and Roast Figs: Rinse the figs thoroughly and remove the stems. Slice each fig in half and arrange them cut side up on a baking sheet. Roast in the oven for 15 minutes until tender and caramelized.
  3. Puree Roasted Figs: Place the roasted figs into a food processor and blend until completely smooth. Scrape down the sides periodically to ensure an even puree. Once pureed, chill this mixture in the refrigerator.
  4. Prepare Cream Mixture: In a food processor or blender, combine the heavy cream, sugar, sweetened condensed milk, and mascarpone cheese. Blend until the mascarpone is fully incorporated and the mixture is smooth. Chill this mixture thoroughly.
  5. Combine and Churn: When both the fig puree and cream mixture are cold, pour them into your ice cream machine. Start processing according to the manufacturer’s instructions. When the gelato is nearly finished churning, add the balsamic vinegar, brandy, and lemon juice. Taste and adjust these flavors to your preference. Continue processing to incorporate.
