Ingredients

Vegetables

  • 1 pound fresh asparagus (ends trimmed)
  • 1 lemon (thinly sliced)

Seasonings & Oils

  • 2 tablespoons olive oil
  • 2 tablespoons freshly squeezed lemon juice (approx. 1 lemon)
  • ½ teaspoon sea salt (or kosher salt)
  • ¼ teaspoon ground black pepper

Instructions

  1. Preheat oven and prepare asparagus: Preheat your oven to 400 degrees F. If desired, line a rimmed roasting pan with parchment paper for easier cleanup. Wash asparagus and break or cut off the hard, fibrous ends of the stems to ensure tenderness.
  2. Arrange asparagus on baking sheet: Place the asparagus spears in a single layer on the prepared rimmed baking sheet. Using a Silpat mat is optional but can help prevent sticking.
  3. Season asparagus: Drizzle the olive oil and freshly squeezed lemon juice evenly over the asparagus. Sprinkle with sea salt and ground black pepper, then toss gently to coat everything evenly. Tuck the thin lemon slices around and on top of the asparagus for added flavor.
  4. Roast the asparagus: Place the baking sheet in the preheated oven and roast for 8-10 minutes. Roast until the asparagus is crisp on the outside and tender inside. Note that thicker asparagus stalks may require a slightly longer cooking time to achieve desired tenderness.

Notes

  • Adjust roasting time based on the thickness of the asparagus stalks; thinner stalks will cook faster.
  • For extra flavor, sprinkle with freshly grated Parmesan cheese or toasted almonds after roasting.
  • Use fresh lemon juice rather than bottled for the best citrus flavor.
  • Serve immediately for the best texture and taste.
