Ingredients

2 large tomatoes

2 tbsp extra virgin olive oil

1/2 tbsp sherry vinegar

1 clove garlic

1 tsp dried oregano

Handful of finely chopped parsley

Sea salt and black pepper to taste

Instructions

  1. Thinly slice the tomatoes into 1/8-inch thick slices and place them in a single layer on a plate. Season with sea salt and black pepper on just one side, then let the tomatoes sit for about 5 minutes to release some of their water.
  2. While the tomatoes sit, combine the olive oil, sherry vinegar, grated garlic, oregano, and a pinch of sea salt and black pepper in a small bowl. Whisk together until well mixed.
  3. After the tomatoes have sat for 5 minutes, gently shake off any excess water. Transfer them to a serving dish, drizzle with the dressing, and sprinkle with chopped parsley.
  4. Serve immediately and enjoy!

Notes

  • If parsley isn’t available, basil or cilantro can be used as substitutes.
  • Feta or goat cheese can be added for a creamy texture that balances the acidity of the vinegar.
  • A pinch of red pepper flakes can be added to the dressing for a spicy kick.
  • This salad is best enjoyed immediately to maintain the texture of the tomatoes.
