Ingredients

3 large eggs

½ cup canned pumpkin purée

1 teaspoon ground cinnamon

½ teaspoon ground nutmeg

8 slices whole wheat bread

2 teaspoons unsalted butter (divided, for cooking)

Optional toppings: maple syrup, powdered sugar, whipped cream, or pecans

Instructions

  1. In a shallow bowl, whisk together eggs, pumpkin purée, cinnamon, and nutmeg until smooth. Add a splash of milk if mixture is too thick.
  2. Dip bread slices into the custard, coating both sides evenly.
  3. Heat 1 teaspoon butter in a skillet over medium-high heat. Add 4 slices of coated bread and cook 3 minutes per side, until golden brown.
  4. Repeat with remaining butter and bread slices.
  5. Serve warm with maple syrup, powdered sugar, or your favorite toppings.

  • Use brioche, challah, or Texas toast for a softer, custard-like center.
