Ingredients

Sauce

  • 1/2 cup mayo
  • 1/3 cup sweet Thai chili sauce
  • 2 tablespoons tamari or soy sauce
  • 1 tablespoon ketchup
  • 1 clove garlic, grated

Meat Mixture

  • 1 pound ground beef, chicken, or turkey
  • 2-3 tablespoons Gochujang (Korean chili paste)
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • Salt and black pepper, to taste

Sliders Assembly

  • 1 package (12 count) dinner rolls, halved lengthwise
  • 4-6 slices sharp cheddar cheese
  • 1 cup shredded spicy cheddar or pepper jack cheese
  • 1/4 cup dill pickles and/or pepperoncini, sliced

Garlic Butter Topping

  • 3 tablespoons salted butter, at room temperature
  • 4-6 cloves garlic, chopped
  • 1 tablespoon chopped fresh basil or parsley
  • 2 tablespoons grated parmesan cheese
  • 2 tablespoons sesame seeds

Instructions

  1. Make the sauce: Combine the mayo, sweet Thai chili sauce, tamari or soy sauce, ketchup, and grated garlic in a bowl until smooth and well mixed. Set aside.
  2. Preheat the oven: Heat your oven to 400° F (200° C) to prepare for baking the sliders.
  3. Cook the meat: In a medium skillet over medium heat, brown the ground beef (or chosen meat), breaking it up as it cooks. Once browned, stir in Gochujang, Worcestershire sauce, onion powder, garlic powder, salt, and black pepper. Cook for an additional 2-3 minutes to develop the flavors, then remove from heat.
  4. Assemble the sliders: Place the bottom halves of the dinner rolls on a baking sheet lined with parchment paper. Layer each bottom bun with slices of sharp cheddar cheese, spoon the cooked meat evenly over the cheese, drizzle about 1/3 cup of the prepared special sauce over the meat, then sprinkle with shredded spicy cheddar or pepper jack cheese. Top with dill pickles and/or pepperoncini slices as desired.
  5. Prepare the garlic butter topping: In a small bowl, combine the softened salted butter, chopped garlic, fresh herbs (basil or parsley), and grated parmesan cheese. Spread this mixture evenly over the top halves of the rolls. Sprinkle sesame seeds over the buttered tops.
  6. Bake the sliders: Cover the assembled sliders with tin foil and bake in the preheated oven for 10-15 minutes. Remove the foil and continue baking for another 10-15 minutes until the cheese is melted and bubbly.
  7. Serve: Brush any remaining garlic butter over the hot sliders immediately after baking. Serve warm with additional special sauce if desired for dipping.
