Ingredients

1 cup old-fashioned rolled oats

½ cup all-purpose flour (70g) (use gluten-free flour if needed)

2 servings protein powder of choice (60-70g or about ¾ cup)

2 teaspoons baking powder

4 eggs

1 ½ cups milk of choice (dairy-free if needed)

1 teaspoon pure vanilla extract

Instructions

  1. Preheat your waffle iron (regular or mini waffle maker).
  2. In a high-speed blender, add all of the ingredients and blend on low for 15-20 seconds until smooth.
  3. Pour the batter into the preheated waffle iron and cook until lightly golden and cooked through.
  4. Once ready, remove waffles and place on a plate. Keep warm in the oven if needed.
  5. Repeat with the remaining batter to yield 12 standard-sized waffles or 18 mini waffles.
  6. Serve with your desired toppings like fresh fruit, syrup, or nut butter.

Notes

  • For gluten-free waffles, use a 1:1 gluten-free flour blend.
  • For dairy-free waffles, use plant-based protein powder and unsweetened non-dairy milk (like almond or oat milk).
