Ingredients

2 tablespoons natural peanut butter

1/4 cup plain Greek yogurt

1 tablespoon maple syrup

1 teaspoon vanilla extract (optional)

2 tablespoons vanilla protein powder

34 tablespoons oat flour or almond flour

Pinch of salt

3 tablespoons mix-ins of choice (chocolate chips, M&Ms, oats, etc.)

Instructions

  1. In a medium bowl, mix together peanut butter, Greek yogurt, maple syrup, and vanilla extract (if using) until smooth.
  2. Stir in protein powder, oat flour, and salt until fully combined.
  3. Fold in your chosen mix-ins.
  4. Place the dough in the freezer for 5 minutes to chill and firm slightly.
  5. If too thin, add more oat or almond flour a teaspoon at a time until preferred consistency is reached.
  6. Enjoy immediately or store in the refrigerator.

Notes

  • Use sunflower seed butter or tahini for a nut-free version.
  • Almond flour can replace oat flour.
  • Choose gluten-free oat flour if needed.
  • To make vegan, use plant-based yogurt and protein powder.
  • Store in fridge for up to 4 days or freeze for up to 1 month.
