Ingredients

Truffle Mixture

  • 7 oz (200g) good quality white chocolate, cut into small pieces
  • 1/4 cup (60ml) whipping cream (30-35% fat)
  • 1 tbsp (14g) butter
  • 1/4 tsp (1g) salt
  • 1/2 tsp (3g) vanilla extract
  • 1/3 cup (40g) pistachios, chopped
  • 1/3 cup (40g) dried cranberries

For Rolling

  • 1/2 cup (60g) chopped pistachios

Instructions

  1. Melt white chocolate and cream: Place the white chocolate pieces and whipping cream in a heatproof bowl set over a bain-marie on low heat. Stir continuously until the chocolate is nearly melted and the mixture is smooth but not overheated.
  2. Add butter: Stir in the butter until fully melted and the mixture becomes completely smooth and glossy.
  3. Remove from heat and flavor: Take the bowl off the heat and stir in the vanilla extract and salt evenly into the chocolate mixture.
  4. Incorporate mix-ins: Gently fold the chopped pistachios and dried cranberries into the chocolate mixture, ensuring even distribution.
  5. Chill mixture: Let the mixture cool slightly, then cover and refrigerate for 2–3 hours until firm enough to handle. Stir once or twice during chilling to maintain texture.
  6. Form truffles: Using a teaspoon, scoop small portions of the chilled mixture and roll tightly into balls using your hands.
  7. Coat truffles: Roll each truffle in the chopped pistachios to coat completely, adding crunch and visual appeal.
  8. Serve or store: Serve immediately or keep refrigerated in an airtight container for up to 2 weeks to retain freshness and texture.

Notes

  • Use high-quality white chocolate for best flavor and smooth texture.
  • Ensure pistachios are finely chopped for easy incorporation and coating.
  • Refrigeration time is essential to firm up the mixture for rolling.
  • Store truffles in an airtight container in the fridge to maintain freshness and prevent melting.
  • These truffles are naturally gluten-free and perfect for gifting during holidays or special occasions.
