Ingredients

  • 1 (8 oz.) can crushed pineapple in pineapple juice (1 cup)
  • 2 tsp. sugar
  • 1 Tbsp. unsalted butter
  • 1/2 tsp. kosher salt

  • 1 cup basmati or jasmine rice, not quick-cooking

  • Juice of 1/2 lime (about 1 Tbsp.)
  • Fresh cilantro, chopped (to taste)

Instructions

  1. Combine Ingredients and Simmer
    In a small saucepan, combine the water, crushed pineapple with juice, sugar, unsalted butter, kosher salt, and red pepper flakes. Cover the saucepan and bring the mixture to a simmer over medium heat, allowing the flavors to meld.
  2. Add Rice and Cook
    Stir in the basmati or jasmine rice and bring the mixture back to a simmer. Reduce the heat to low and let it simmer partially covered for about 12-15 minutes, or until the liquid is absorbed and the rice is almost tender with a slight bite remaining.
  3. Steam and Fluff
    Remove the saucepan from heat and keep it covered for another 5 minutes to allow the rice to steam and finish cooking gently.
  4. Add Lime Juice and Cilantro
    Fluff the rice with a fork, then stir in the fresh lime juice and chopped cilantro. Adjust the salt to taste, adding more if necessary. Serve warm as a delicious tropical side dish.
