This pineapple beet smoothie is a vibrant, nutrient-packed blend made with cooked beets and frozen pineapple, without any banana. It’s perfect for a healthy breakfast or a refreshing snack, with a paleo-friendly and kid-approved profile. The addition of cauliflower and collagen peptides makes it a wholesome, protein-rich option that’s creamy and naturally sweetened with honey and lime juice.

  • 1/2 cup cooked beets (80g)
  • 1/2 cup cauliflower (60g), steamed, then frozen

  • 3 Tbsp collagen peptides
  • 3/4 cup canned coconut milk (or any milk)
  • 1 Tbsp raw honey
  • Juice from 1/2 a lime

Instructions

  1. Prepare Ingredients: Ensure the cauliflower is steamed and then frozen along with the frozen pineapple. Have the cooked beets ready and cooled.
  2. Add Ingredients to Blender: Place the frozen pineapple, cooked beets, steamed frozen cauliflower, collagen peptides, canned coconut milk, raw honey, and lime juice into your blender.
  3. Blend Smoothie: Start blending at a low speed, gradually increasing to high speed to achieve a thick, smooth, and consistent texture.
  4. Serve: Pour the smoothie evenly into two glasses. Optionally add your favorite toppings, then enjoy immediately for best freshness and flavor.

Notes

  • Using frozen fruits and vegetables helps create a creamy, chilled smoothie without the need for ice.
  • Collagen peptides add protein and support joint and skin health but can be omitted or substituted with plant protein for a vegan option.
  • You can swap coconut milk for any milk of choice, such as almond milk, oat milk, or dairy milk.
  • Adjust the sweetness by adding more or less honey according to your taste.
  • This smoothie is paleo-friendly and free from bananas for those avoiding them.
